Meatballs in Tomato Sauce for Pasta

400g Beef Mince
1 clove garlic, crushed
1 cup grated parmesan cheese
2 slices thick bread, crusts removed
1/3 cup milk
1 tbsp olive oil
750mL bottle tomato pasta sauce
1 cup beef stock
a few basil leaves
Pasta shells or spaghetti to serve

Place the mince, garlic and parmesan in a bowl. Tear the bread into small pieces and place in a small bowl, pour over the milk and oil. Set aside for a few minutes, and then mix with a fork until smooth. Add the bread mixture to the mince. Season with salt and pepper.

Using your hand, bring the mixture together and mix until combines. Shape small spoonfuls of mince mixture into meatballs.
Place the tomato pasta sauce, beef stock and basil leaves in a wide heavy based pan, bring to the boil, and then reduce the heat to a simmer. Have the tomato sauce at simmering point, not any higher or meatballs may break apart.

Carefully spoon the meatballs into the sauce and cook uncovered for about 10-12 minutes or until the meatballs are cooked (depending on the size of the pan the meatballs may need to be gently turned while cooking). While meatballs are cooking, cook pasta. Serve pasta with a spoonful of the tomato sauce and spoon over a few meatballs.
