400 gr cold roast, coarse chopped
1 onion, thinly sliced
1 red pepper, cut into strips
1 parsnip, julienned
1 apple, coarsely grated
1 bundle chives, chopped
150 gr horseradish, finely grated
Juice of 1/2 orange
Pepper
Salt
2 tablespoons vinegar
Mix horseradish and juice of orange till creamy. Pepper, salt to taste, add vinegar. Mix meat with remaining ingredients and pour dressing over. Enjoy a baguette with the meat salad.
