Mashed Potatoes for 100

Servings: 100 Portions
Portions: 2/3 Cup Each

35 lb. potatoes, white, fresh, quartered
to cover (variable) water
1/2 cup (5 oz) salt
1/2 cup (5 oz) salt
2 cups (1 lb) butter or margarine, melted
2-1/4 cups (10 oz) milk, nonfat, dry
2-3/4 quart water, warm

Cover potatoes with water; add 1/2 cup salt; bring to a boil; reduce heat and simmer 25 minutes or until tender. Drain well. Transfer potatoes to mixer bowl; beat on low speed until broken into smaller pieces. Add 1/2 cup salt and melted butter or margarine.

Beat on high speed 3 to 5 minutes or until no lumps remain. Reconstitute milk and warm water; blend into potatoes on low speed. Beat on high speed 2 minutes or until light and fluffy.

NOTE:
45 lb fresh white potatoes A.P. will yield 35 lb peeled potatoes.

Peeled potatoes may be dipped in solution of antioxidant and water to prevent discoloration.

35 lb fresh, peeled, whole, ready-to-use potatoes may be used. Quarter potatoes.

3 quart other types of milk may be substituted for nonfat dry milk and water.
