5 ml cinnamon 1 tsp
salt & pepper to taste
45 ml olive oil 3 tbsp
30 ml pure maple syrup 2 tbsp
3 small onions, peeled & quartered
500 g potatoes, peeled & cut into rounds 1 lb
500 g parsnips, peeled & cut into thick rounds 1 lb
In a large bowl, whisk together cinnamon, salt, pepper, oil and maple syrup. Add onions, potatoes and parsnips. Toss to coat.
Spread vegetables on large lightly greased baking sheet. Bake in preheated 400 F (200 C) oven for 25 minutes. Turn vegetables over and continue baking for another 25 minutes or until onions, potatoes and parsnips are tender and browned.
