Mango Salsa

Rather sweet and very pretty

About 6 cups

1/2 cup jalapeno pepper jelly
3 tablespoons fresh lime juice
2-1/2 cups chopped peeled pitted mango
1-1/4 cups chopped red bell pepper
3/4 cup chopped red onion OR other sweet onion
1/3 cup chopped fresh cilantro
1 jalapeno chili, minced
salt and pepper to taste

Whisk together jelly and lime juice in large bowl. Mix in all remaining ingredients. Season to taste with salt and pepper. Can be made 2 hours ahead. Cover and chill.
