2 soft 9-inch flour tortillas
1/2 cup tomato sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 cup grated part-skim mozzarella cheese or crumbled goat cheese
2 mushrooms, sliced
4 black olives, cut in strips
quarter sweet green pepper, cut in strips
Cut tortillas into 2-inch triangles using scissors or knife. Place on baking sheet. Mix together tomato sauce, oregano and basil. Spread about 1 teaspoon over each triangle. Sprinkle with cheese, mushrooms, olives and green pepper. Bake at 400 for 3 to 5 minutes or until cheese melts.
Makes about 32 pieces.
