1 tablespoon olive oil
1 pound fresh snow peas, strings removed, trimmed and rinsed
3/4 cup sliced water chestnuts
1 tablespoon dry sherry
1/2 teaspoon salt, or to taste
1/4 teaspoon sugar
1/4 cup water
Heat wok over medium high heat until hot. Add oil and swirl to coat pan. Add snow peas and water chestnuts and stir a few times. Quickly add sherry, salt, sugar, and water. Cover immediately and cook 1 minute. Reduce heat to low and simmer 15 seconds. Uncover and stir to mix well. Transfer to hot serving dish and serve.
