Low Fat Mashed Cauliflower

Makes 6 servings

1/2 head cauliflower, chopped into small pieces
3 ounces fat free cream cheese, (1 small package)
1 tablespoon low-fat margarine
salt, pepper to taste

Steam or boil cauliflower until soft using chosen method. Drain well and put in a food processor equipped with steel blade. Add in the cream cheese, butter, salt and pepper. Process until mixture is smooth and creamy.
