1 cup all-purpose flour
1 cup bran flake cereal, crushed
1/4 cup firmly packed brown sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup skim milk
2 eggs
1 carrot, shredded
1 large ripe banana, mashed
1/3 cup chopped walnuts
Preheat oven to 375 degrees. Lightly grease and 8-inch square baking pan. In medium bowl, combine flour, cereal, brown sugar, cinnamon, baking powder, baking soda and salt; mix well. In a small bowl, combine milk, eggs, carrot, banana and walnuts. Add to dry ingredients, mixing well. Spoon batter into pan. Bake 25 to 35 minutes, or until browned. Cool in pan on wire rack.
Cut into 12 bars.
