Low Fat Almond Peach Crisp

6 peaches, pitted and sliced
1/2 teaspoon slivered lemon rind
1/2 cup brown sugar
2/3 cup flour
3 tablespoon butter
1/8 teaspoon salt
1/2 cup sliced almonds

Heat oven to 350oF. Combine peaches, lemon rind and 3 tablespoon brown sugar in a 9 inch round glass or ceramic pie plate.

In a small bowl, combine remaining sugar, flour, butter and salt. With fingers work into fine crumbs. Toss with almonds. Sprinkle over fruit. Bake 35 minutes or until golden and bubbly. Cool slightly and serve.

Makes 6 servings.
