Light Sesame Chicken

40 ml honey
30 ml sesame seeds
30 ml soy sauce
1 garlic clove, finely chopped
2 egg whites
50 ml cornstarch
750 g chicken breast, boneless, skinless & halved
– salt & pepper to taste –
30 ml vegetable oil
4 shallots, thinly sliced
750 g broccoli florets, steamed until tender crisp

In a small bowl; combine honey, sesame seeds, soy sauce and garlic. Set aside.

In a large bowl; whisk together egg whites and cornstarch. Add chicken, seasoning with salt and pepper. Toss to coat.

In a large skillet; heat 1 tablespoon (15 ml) oil over medium-high heat. Add half the chicken. Cook, turning occasionally, until golden and cooked through, for 6 to 8 minutes. Transfer chicken to plate; repeat with remaining oil and chicken. Return all chicken to skillet. Add scallions and toss to coat. Add cooked broccoli and gently toss. Serve with brown rice.
