2 lb very small new potatoes
1/3 c butter or margarine
1 teaspoon grated lemon rind
1 tablespoon lemon juice
2 tablespoon minced chives
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground cardamom
Scrub potatoes well; pare a band from the middle of each one.
Place potatoes in a lg saucepan; cover with water. Heat to boiling; lower heat. Cover; simmer 20 min or until tender.
Drain potatoes; return to pan. Shake over med heat to dry.
Melt butter; stir in lemon rind and juice. Pour over hot potatoes. Sprinkle with chives, salt, pepper and cardamom. Toss gently. Serve at once.
