30 ml butter 2 tbsp
4 chicken breasts, boneless & skinless
3 garlic cloves, minced
500 ml water 2 cup
175 ml rice 3/4 cup
2 chicken bouillon cubes
1 lemon, halved
125 ml broccoli florets 1/2 cup
125 ml carrots, sliced 1/2 cup
125 ml cauliflower florets 1/2 cup
In a large skillet; melt 1 tablespoon (15 ml) butter. Add chicken and cook over medium-high heat for 5 to 7 minutes or until lightly browned. Add remaining butter and garlic; cooking for a few minutes.
Add water, rice, bouillon cubes and juice from 1/2 lemon. Bring to a boil. Cover, reduce heat and simmer for 20 minutes.
Add broccoli, carrots and cauliflower. Continue cooking for 5 minutes or until chicken juices run clear.
