Lemon Butter

1/4 cup butter
1 tablespoon lemon juice
1 tablespoon chopped flat-leaf parsley
1/2 teaspoon salt
1/8 teaspoon cayenne pepper

Melt butter in a saucepan over medium heat. Stir in lemon juice, parsley, salt and cayenne pepper. Serve over vegetables or fish.

Makes about 1/3 cup.
