Italian Vegetable Pie

2 yellow peppers, sliced into strips
2 red peppers, sliced into strips
227 g mozzarella cheese, sliced 8 oz
4 medium zucchini, sliced
75 ml black olives, pitted 1/3 cup
salt & pepper to taste
2 cloves of garlic, crushed
2 bunches of fresh basil, chopped
50 ml olive oil 4 tbsp

In a lightly greased casserole dish; arrange peppers, mozzarella and zucchini. Top with olives and season with salt and pepper.

In a small bowl; mix garlic, basil and oil. Pour over vegetables and cheese. Bake in preheated 350 F (180 C) oven for 25 to 30 minutes or until golden brown.

Serves 4
