10 – 12 parsnips, peeled & trimmed
125 ml honey 1/2 cup
125 ml water 1/2 cup
25 ml butter 2 tbsp
Preheat oven to 350 F (180 C). Boil parsnips in a saucepan with salted water until tender, about 15 minutes. Remove from heat; cut into thick slices and place in a baking dish. Cover parsnips with honey, water and butter. Bake 10 minutes, turn over and bake another 10 minutes.
Increase oven temperature to 425 F (220 C) and bake an additional 5 minutes or until lightly browned. Remove from oven; serve warm.
