Honey Mussels 1 lb
Olive Oil 1 oz
Butter 2 oz/2oz to finish
Shallots, minced 1 T
Bacon, double smoked tiroler 3 T
White Wine 4 oz
Beer 4 oz
Whip Cream 1 oz
Chili Flakes 1 tsp
Thyme pinch
Salt, black pepper to taste
Heat large frying pan over medium high heat
Add oil, butter then add the shallots and cook for 1 minute
Add diced bacon and cook until shallots are translucent
Add the mussels, stir well then cover the fry pan and cook over medium hear for approximately 3 to 4 minutes until all mussels are opened and season to taste
Add the white wine, beer, chili flakes and bring to a simmer
Pour mussels into heated bowl and serve hot
