300 ml margarine or butter 1 1/4 cup
250 ml sugar 1 cup
150 ml brown sugar 2/3 cup
1 egg
50 ml honey 1/4 cup
50 ml milk 1/4 cup
5 ml vanilla 1 tsp
625 ml flour 2 1/2 cup
250 ml quick cooking oats 1 cup
125 ml wheat germ 1/2 cup
5 ml baking soda 1 tsp
2 ml salt 1/2 tsp
375 ml raisins 1 1/2 cup
250 ml carrot, shredded 1 cup
250 ml flaked coconut 1 cup
In a large bowl; combine margarine, sugar, brown sugar, egg, honey, milk and vanilla. Beat until creamy. Combine flour, oats, wheat germ, baking soda and salt. Add to creamed mixture gradually, beating at low speed until thoroughly blended. Stir in raisins, shredded carrots and coconut. Drop heaping teaspoons onto ungreased baking sheet, leaving room for spreading. Bake at 350 F (180 C) for 10 minutes or until golden brown. Cool slightly, then remove to cooling rack.
