Makes 24 servings
1-1/2 cups tomato sauce
1 cup honey
1 cup chopped onion
1/2 cup tomato paste
3 tbs. red wine vinegar
1 tbs. dijon mustard
1/2 tbs. minced garlic
1/8 teaspoon cayenne pepper
4 lbs. frozen bread dough, thawed
flat leaf parsley for garnish
In a deep saucepan, combine the tomato sauce, honey, onion, tomato paste, vinegar, mustard and garlic.
Bring to a boil, reduce to a simmer and cook until the sauce reduces by about 1 cup. Stir in the cayenne and set aside.
Press the dough onto an oiled sheet pan. Then, evenly press the dough into the pan. Dimple the dough every two inches or so with your fingertips.
Brush the dough with the sauce. Bake in the oven at 500 degrees until lightly browned. (about 10 to 15 minutes).
Cool slightly and cut into 24 triangles about 3-by-3-1/2 inches. Garnish with some green and chow down.
