30 ml extra virgin olive oil 2 tbsp
175 ml onion, finely chopped 3/4 cup
garlic clove, minced
fresh or dried herbs, minced
1 kg tomatoes, peeled, seeded & diced 2 lb
salt & pepper to taste
Warm oil in saucepan over low heat. Add onion; cook until translucent, about 4 to 5 minutes. Add garlic and herbs to taste and cook for about 1 minute. Add tomatoes and bring to a boil over high heat. Reduce heat and simmer, uncovered, stirring occasionally, for about 40 to 45 minutes; until the juice has evaporated and sauce has thickened.. Season to taste with salt and pepper – use immediately or let cool, cover and refrigerate or freeze.
