Hash Brown Quiche

500 g frozen hash brown potatoes 1 lb
75 ml melted butter 1/3 cup
250 ml cheddar cheese, shredded 1 cup
250 ml swiss cheese, shredded 1 cup
250 ml ham, diced 1 cup
4 eggs
125 ml half and half cream 1/2 cup
salt & pepper to taste

Slightly thaw hash brown potatoes. Remove excess moisture with paper towel. Press potatoes into lightly greased 9 x 13 inch (23 x 33 cm) pan. Brush melted butter over potatoes. Bake in preheated 425 F (220 C) oven for 20 minutes. Remove from oven and lower temperature to 350 F (180 C). Sprinkle cheeses and ham evenly over crust.

In a medium bowl, beat eggs and cream. Add salt and pepper. Pour over cheeses and ham. Bake at 350 F (180 C) for 35 minutes or until set.
