Ground Turkey “Extra Special” Low Fat Meatloaf

1 lb or more ground turkey
2 egg whites
seasoned bread crumbs (enough to firmly bind)
1 tablespoon garlic powder
1 tablespoon dried parsley
Salt and fresh pepper
2 tablespoons Fat-free parmesan cheese
1 cup bbq sauce
4 slices low-fat boiled ham
1 cup shredded low-fat mozzarella
(I used Health Choice for the ham and cheese)

Using your hands, mix together the ground turkey, egg whites, bread crumbs, seasonings, parmesan cheese and about 1/2C bbq sauce. Add more bread crumbs and bbq to reach a consistency that you like. Form a large ball with the mixture, and dump out onto a piece of waxed paper and flatten.

Place the slices of ham and the shredded mozzarella in the center and roll the meat pinching the ends closed and sort of folding under.

Transfer to a baking pan with a lip and using your hands, spread additional bbq all around the meatloaf.

Bake at 350 degrees for about 45 minutes or until you don’t see any pink. Let the meat loaf sit for a little while so that the cheese does not come oozing out.
