Grated Carrot Salad

10 carrots, grated
2 cucumbers, quartered & sliced
125 ml raisins 1/2 cup
15 ml lemon juice 1 tbsp
2 ml ground ginger 1/2 tsp
15 ml honey 1 tbsp
2 ml ground cinnamon 1/2 tsp
75 ml olive oil 1/3 cup
pepper
125 ml almonds, slivered 1/2 cup

Place carrots and cucumbers in a bowl; add raisins and stir until mixed. Combine lemon juice, ginger, cinnamon, honey, olive oil and pepper in a container with lid. Shake container well to combine ingredients. Place slivered almonds in a small pan; stir over low heat until lightly golden. Pour dressing over salad; garnish with almonds and serve.
