75 ml vegetable oil 6 tbsp
6 garlic cloves, crushed
30 ml black bean sauce 2 tbsp
3 tomatoes, coarsely chopped
909 g spinach, destalked & chopped 2 lb
chili sauce to taste
30 ml lemon juice 2 tbsp
salt & pepper to taste
In a wok or large skillet; heat oil and stir fry garlic, bean sauce and tomatoes for 1 minute. Stir in spinach, chili sauce and lemon juice; mix well. Cook for 3 minutes or until spinach is just wilted. Season to taste.
Remove from heat and serve immediately.
