1-1/2 lbs mince beef
3 slices bread, torn into soft crumbs
4 cloves garlic, crushed
2 tablespoons chopped parsley
2 tablespoons chopped mint
1 teaspoon paprika
1 teaspoon salt
pepper to taste
2 eggs
LEMON SAUCE:
8 oz can tomato sauce
grated rind of 2 lemons
1/4 cup lemon juice
salt and pepper to taste
1 tablespoon minced mint
Combine all ingredients for the meatballs and form into walnut-sized balls. Place in crockpot. Mix the sauce ingredients together and pour over the meatballs. Cover and cook on LOW 4 – 6 hours. Serve with rice.
