Garlic Butter (Buerre D’Ail)

5 tablespoon unsalted butter, room temperature
1/2 bunch parsley, leaves only, chopped
1 small garlic clove, minced
1/2 shallot, minced
1 teaspoon Cognac or other brandy
1/4 teaspoon white pepper

Also delicious tossed with pasta, potatoes or green vegetables or spread atop grilled fish, shellfish or chicken.

Blend all ingredients. Refrigerate.

Makes about 1/2 cup.
