Fruit Salad in Almond Syrup

3 peaches
3 apples
6 tablespoons lichees
6 tablespoons cherries
4 slices pineapple
3 tablespoons ground almonds
2 tablespoons ground glutinous rice
2 tablespoons cornflour (blended in 4 tablespoons water)
6 tablespoons sugar

Dice the apples, peaches and pineapple as a fruit salad. Add the lichees and cherries and mix all the fruits together in a large bowl.

Mix the almonds, rice and sugar in 3/4 pint water. Heat to near boiling. Simmer gently for 10 minutes stirring continuously. Add the cornflour to thicken further. Stir over low heat for another 2-3 minutes. Pour the syrup over the fruit salad; serve hot or well-chilled.
