3 medium tomatoes, peeled & quartered
375 ml water 1 1/2 cup
125 ml onion, chopped 1/2 cup
125 ml celery, chopped 1/2 cup
75 ml tomato paste 1/3 cup
30 ml fresh basil, snipped 2 tbsp
10 ml instant chicken bouillon granules 2 tsp
5 ml sugar 1 tsp
In a large saucepan, combine tomatoes, water, onion, celery, tomato paste, basil, bouillon granules and sugar. Bring to boiling, reduce heat. Simmer, covered, about 20 minutes or until celery and onion are very tender.
Remove from heat and cool for 10 minutes.
Place half of tomato mixture in blender. Cover and blend until smooth. Repeat with remaining mixture. Return all soup to saucepan, heat through.
