Elvira’s Halloween Soup

1 lb black beans
1 large onion
2 cloves garlic, diced
2 tablespoons A-1 Sauce
salt & cayenne pepper to taste
1 lb. carrots, sliced into rounds
cilantro for garnish (optional)

Rinse and soak beans for 6 hours or overnight. Drain beans and empty into a large soup pot. Add enough water to cover the beans by 2 to 3 inches. Bring to a boil and then skim off any foam that rises to the surface.

Add garlic and onion. Lower heat and cook until onions are soft, about 15 minutes.

Next, add A-1 Sauce and salt and cayenne pepper to taste. Cook for about 1 hour. Add carrots and continue cooking for another 30 minutes. Garnish with cilantro, if desired, before serving.
