Eggs in a Tomato Bowl

2 large tomatoes
salt & pepper to taste
4 eggs 4
2 ml italian seasoning 1/2 tsp

Cut off a thick slice, about 1/2 inch (1 cm) at the stem of end of tomatoes.

Set slices aside. Scoop out seeds and centre pulp. Season with salt and pepper. Place tomatoes upside down on paper towel to drain for about 5 minutes.

Place tomatoes upright in small microwave bowl. Break 2 eggs into each tomato. Pierce egg yolks with fork. Sprinkle with italian seasoning and place top slice over tomato. Microwave (one at a time) on medium-high power for 3 minutes and 45 seconds or until egg is almost cooked. Let stand 2 minutes.
