Egg Flower Soup (Kakitama-Jiru – Japan)

5 cups dashi or chicken stock
8 snow pea pods
2 tablespoons Japanese soy sauce
2 eggs
1/2 teaspoon salt

Bring stock to a boil and add the snow peas. Cook for 1 minute after the liquid returns to the boil then add the soy sauce. Beat eggs lightly with salt and pour slowly into boiling stock, stirring gently. Ladel soup into bowls and serve immediately.
