1 medium red bell pepper, diced
75 ml raisins 1/3 cup
75 ml dried apricots 1/3 cup
75 ml dried pears 1/3 cup
50 ml red onion, diced 1/4 cup
50 ml fresh cilantro, coarsely chopped 1/4 cup
75 ml lime juice 1/3 cup
15 ml olive oil 1 tbsp
1 ml each salt & pepper 1/4 tsp
In a glass bowl; combine red pepper, raisins, apricot, pears, onion, cilantro, lime juice, oil, salt and pepper. Cover and chill for at least one hour.
This salsa is great served over grilled boneless chicken breasts.
