Deluxe Salted Peanut Brittle

2 cups sugar
1 cup light corn syrup
1/4 cup water
1-1/2 cups salted peanuts
3 tablespoons butter or margarine
1 teaspoon vanilla
2 teaspoons baking soda

Combine sugar, corn syrup and water in a heavy 3 quart saucepan. Mix well. Cook over medium heat, stirring constantly until sugar dissolves. Continue cooking, stirring frequently to prevent scorching until mixture reaches 285 degrees. Remove from heat at once. Stir in salted peanuts and butter; cook, stirring constantly until mixture reaches 295 degrees. Remove from heat at once. Add vanilla and baking soda; stir to blend (work fast). Mixture will foam. Pour mixture into a well buttered jelly roll pan. Wait 8 to 10 minutes then mark into squares with a knife. When brittle is cool, invert pan over cutting surface. Tap lightly to release brittle. Cut it using knife marks as a guide. Most squares will be perfect. I just pour mixture into pan, when cool, tap lightly.
