Deep Fried Onion Rings

3 medium onions
1 egg
175 ml milk
125 ml cornstarch
125 ml flour
5 ml baking powder
salt & pepper to taste
1 L vegetable oil

Peel onions, cut into 1/4 inch (.6 cm) slices and separate into rings.

In a small bowl; stir egg and milk together. Slowly add to dry ingredients, stirring until smooth.

Dip onion rings in batter, carefully coating them.

Fry in vegetable oil that has been heated to 375 F (190 C), about two minutes per side or until golden brown. Remove from oil and drain on paper towels.

Serves 6
