Curry Mayonnaise

This is nice over a chicken salad, but goes well with fish Use as much curry powder as you would like.

1 tablespoon oil
1 small onion, finely chopped
1 small clove garlic, crushed
1 tablespoon curry powder
2 teaspoon tomato paste
2 slices lemon
salt and fresh ground pepper
2 tablespoon mango chutney
2 – 3 tablespoon cream
1-1/4 cups mayonnaise (homemade)

Heat oil in a small pan, add onion and garlic and sauté gently until onion is transparent. Add curry powder and cook, stirring for a few more minutes. Stir in tomato paste. Add lemon slices and salt and pepper and cook gently 3 minutes more. Cool and remove lemon slices. When cold, add chutney, mayonnaise and cream, mix well.

Taste and add more seasoning if needed. If mayonnaise is too thick dilute with a little warm water.
