2 cucumbers, thinly sliced
125 ml whipping cream 1/2 cup
50 ml white vinegar 3 tbsp
50 ml granulated sugar 3 tbsp
1 ml salt 1/4 tsp
tomato wedges
Put cucumber slices in bowl of ice water; let stand for 30 minutes. Drain and pat dry. Transfer to shallow serving dish.
Meanwhile, in blender or food processor; blend cream, vinegar, sugar and salt until mixture is very thick. Cover and refrigerate until just before serving. Pour over cucumbers and mix. Garnish with tomato.
