Creamy Corn Salad

1 can kernel corn, drained (12 oz / 341 ml)
1 can black beans, rinsed & drained (14 oz / 398 ml)
125 ml red onion, finely chopped 1/2 cup
125 ml red pepper, finely chopped 1/2 cup
2 medium tomatoes, finely chopped
30 ml fresh parsley, chopped 2 tbsp
50 ml ranch style dressing 1/4 cup
15 ml lime juice 1 tbsp
1 ml chili powder 1/4 tsp
1 garlic clove, minced

In a large bowl; combine corn, beans, onion, pepper, tomatoes and parsley.

In a small bowl; combine dressing, lime juice, chili powder and garlic. Pour over corn mixture, tossing well.

Serves 6
