Creamed Double Potatoes

Next time you want your mashed potatoes with flair, try this combo. Sweet potatoes add nutrition, color and flavor.

2 pounds baking potatoes
1 medium sweet potato (yam)
Salt and pepper to taste
1/2 cup light margarine
1 cup skim milk
Sliced green onions, optional

In large pot, cover both types of potatoes with water and boil for 40 minutes or until tender.

Peel potatoes and place in bowl with margarine and milk.

Beat until smooth. Season with salt and pepper and sprinkle with green onions if desired.
