Cream of Broccoli Soup

1 large onion, coarsely chopped
2 medium carrot, sliced
2 celery stalks, sliced
1 garlic clove, minced
750 ml chicken stock 3 cup
50 ml uncooked rice 1/4 cup
750 ml broccoli, coarsely chopped 3 cup
500 ml milk 1 cup
5 ml salt 1 tsp
pinch cayenne pepper

In large saucepan; combine onion, carrot, celery, garlic and chicken stock; bring to a boil. Add rice; cover and simmer for 15 to 20 minutes or until rice is tender. Add broccoli; cover and simmer until tender, about 5 minutes. Transfer to a blender or food processor and puree. Return to saucepan; add milk, salt and pepper. Serve hot or let cool; cover and refrigerate until serving time.
