Cottage Cheese Stuffed Celery for 100

Portions: 2 stalks each

200 pieces (6 lb.) Celery, fresh, 2 to 3-inch pieces
Water, iced, To cover
1 quart (2 lb.) cottage cheese
4 tablespoon (1-1/2 oz.) tomato catsup
2 tablespoon prepared horseradish
2 teaspoon onions, dry, grated

Place celery in water 1 hour or until crisp. Drain on sheet pans lined with waxed paper. Set aside.

Combine cottage cheese, tomato catsup, horseradish, and onions; blend thoroughly. Fill hollow section of each celery piece. Cover with waxed paper and refrigerate until ready to serve.

NOTE:
8 lb 4 oz fresh celery A.P. will yield 6 lb trimmed celery cut into 2 to 3-inch pieces.
