Cottage cheese, as a substitute for shortening, gives these cookies a rich, shortbread-like texture.
1/2 cup butter
1 1/2 cups all-purpose flour, divided use
2/3 cup granulated sugar
1/2 cup cottage cheese
1 large egg
2 tablespoons milk
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
1/4 teaspoon baking soda
Preheat oven to 375°F.
In a large bowl beat butter until softened; stir in half of the flour, sugar, cottage cheese, egg, milk, baking powder, vanilla and baking soda; beat until combined. Stir in remaining flour.
Drop by teaspoonfuls and place 2 inches apart on an ungreased baking sheet.
Bake for 9 to 11 minutes or until browned. Cool on baking sheet for 1 minute before removing to a wire rack to cool.
