Chicken Caccitori with Spaghetti Squash

Serving Size : 4

1/2 cup chopped onion
1/4 cup water
1 cup canned tomatoes, chopped
1/4 cup tomato paste
1 teaspoon dried oregano
1 clove minced garlic
1/4 teaspoon pepper
4 large boneless skinless chicken breast halves*

Sauté onion & garlic in 1 tablespoon olive oil in a hot skillet, until tender. Add the tomatoes, paste & seasonings, stir well. Cover, reduce heat, and simmer 10 minutes. Add chicken to skillet; cover with the sauce. Cover and simmer 30 minutes; uncover and simmer an additional 15 minutes. Serve over spaghetti squash.
