Chicken Burgers

Serve on toasted buns with mayonnaise, lettuce and sliced tomatoes.

2 cups chopped cooked chicken (or turkey)
1/2 cup seasoned breadcrumbs
1/4 cup finely minced onion
2 eggs
Salt and freshly ground pepper to taste
2 to 3 tablespoons vegetable oil

Combine chicken, breadcrumbs, onion and eggs in medium bowl and blend well. Season with salt and pepper. Cover and refrigerate until ready to use.

Form chicken mixture into 6 patties. Heat oil in skillet over medium-high heat. Add patties and fry until browned, turning once.

Makes 6 servings.
