Chesapeake Bay Crab Cakes

1 pound fresh blue-crab meat
9 crushed saltine crackers
1 TBS mustard
1 TBS mayonnaise
1 egg
3/4 teaspoon red pepper
3 TBS chopped fresh parsley
salt and pepper to taste

Mix all ingredients together, shape into small patties and fry in hot butter until golden brown on both sides!

Serve with a good coleslaw and whatever else sounds good to you.
