4 large tomatoes, cut into wedges
500 ml mozzarella cheese, cut into small cubes
250 ml fresh basil leaves, cut into strips
3 cloves of garlic, minced
150 ml extra virgin olive oil
salt & fresh ground pepper to taste
In a large bowl; combine tomatoes, cheese, basil, garlic, olive oil, salt and pepper. Let stand, covered at room temperature for at least 2 hours.
