1 L carrots, sliced 4 cup
15 ml ginger, minced 1 tbsp
50 ml fresh mint, minced 1/4 cup
Steam carrots over boiling water until tender; 3 to 5 minutes. Remove from heat and reserve 2 tablespoons (25 ml) of the cooking liquid. In a medium size bowl; while still warm, toss carrots with cooking broth, mint and ginger.
