2 tablespoon Butter
2 tablespoon Olive oil
1 md Onion; chop
4 cl Garlic; mince
24 Mushrooms; slice
2 Bn basil; chop
20 Roma tomatoes; peel, seed; chop
1/4 cup Vodka
1/8 teaspoon Crushed red pepper flakes
1/3 cup Heavy cream
16 oz Penne; cook
Salt and pepper
Parmesan
Basil; garnish
Put oil and butter in pan and sauté onions, garlic and mushrooms for 5 minutes. Add tomatoes, basil, vodka, pepper flakes, salt and pepper. Simmer for 15 to 20 minutes. Stir in cream. Put in processor and pulse until creamy. Serve over penne with Parmesan cheese.
