1 (12-ounce) package frankfurters, cut into 1/2-inch pieces
1/3 cup finely chopped onion
1 cup sliced celery
3 cups cooked rice
1/3 cup sweet pickle relish
2 tablespoons vegetable oil
1 tablespoon vinegar
1 tablespoon prepared mustard
1 teaspoon salt
1/4 teaspoon ground black pepper
2 hard-cooked eggs, chopped
Cook frankfurters, onion and celery in skillet over low heat until vegetables are tender crisp. Add rice and relish.
Blend oil, vinegar, mustard, salt and pepper. Stir into rice mixture; heat thoroughly. Gently fold in eggs.
Makes 6 servings.
