Cajun Rib Eye

3 garlic cloves
2 tablespoons kosher salt
cayenne pepper
oregano
oil

Rub the meat with oil. Whir all other ingredients in a food processor until they’re the consistency of wet flour. Rub into meat and let meat sit for 1/2 hour.

For medium/well, broil 4 inches from broiler for 8-10 minutes per side. The rub will get black and crusty – easy to scrape off – but the meat is moist.
