Originally, Bubble and Squeak was a recipe to use up leftovers including roast beef. Nowadays it’s normally made without the meat. Mashed potatoes are commonly used.
25 g butter, dripping or lard
1 onion; finely chopped
450 g potatoes; cooked and mashed
225 g cabbage, spring greens or brussels sprouts; chopped
4-8 slices cooked beef; finely chopped (optional)
Melt the butter in a large frying pan, add the onion and fry for a few minutes until softened, stirring frequently. Add the potatoes and cabbage. If you are including the beef, add this as well. Fry over a medium heat for 15 minutes until brown then serve.
